Bartlett Almondine Mousse/serves 2

1/4 cup cold water
1 envelope unflavored gelatin
1/4 cup boiling water
1 fresh ripe pear, peeled
2/3 cup instant milk
1 capful almond extract
2 packets stevia (natural sweetener)
6-8 ice cubes

Sprinkle gelatin over cold water to soften, add boiling water. Pour gelatin mixture into blender, add 3/4 of pear, milk, extract and stevia. Blend til smooth. Add ice cubes, one at a time, blend after each addition. Cut remaining 1/4 of pear into finely diced pieces and fold into blended mixture.. Pour mousse mixture into dessert glasses. Serve immediately or chill if desired.
