Surprising New Thinking on Healthy Foods


An article written by Kristin Kirkpatrick, manager of Cleveland Clinc Wellness Institute, filters some of the confusion on old thinking, by updating foods that are healthy.  Rumors about food somehow persist even though numerous studies have been done that clearly tell us some of those foods labelled bad for us, have been proven to be be good for us, so good, in fact, they may be the very foods that help you reduce stress, prevent heart disease, and even prevent certain cancers. Would you like to see some of your favorite foods taken off the NO list and bring it back on the YES list?
Chocolate, was put on the NO list for lots of us, turns out you can put it back on the YES list because a Dark Chocolate containing 70% or more of cocoa has flavenoids, the very same that are in green tea, red wine and berries.  Proven studies show an ounce of dark chocolate daily reduced risk of heart disease and an ounce & half enjoyed daily may help reduce emotional stress. I’m going for the 1.5 ounce, because I used to say “i was addicted and anything I needed to eat if it had chocolate on it, consider it gone.” 
Eggs, my old doctor & many others told us that eggs were on the NO list becuase they raise cholesterol and put us at risk for heart disease.  Well, the new studies show that eggs have antioxidants, protein & other great nutrients.  A study in 2011 found that eating eggs regularly may reduce the risk of cancer & cardiovascular diseases because of high antioxidants. Also, several other studies that they may reduce blood pressure.  New research from Yale University that eggs can be included in your heart-healthy diet without negative effects on cholesterol, weight or endothelial function.
Nuts were on the NO NO list because they were fattening, well put them back on your YES list because they have been proven to have protein & healthy fats to may help you lose weight, in moderation, of course.  And because of the healthy fats may reduce the risk of stroke and heart attacks, according to recent studies.
Soy, the old stories told us that we would have increased risk of certain cancers, when in fact you can add them to your YES list because numerous research studies have shown that isofavones & protein in whole soy sources clearly demonstrate the reduction of cancers of the breast, colon and prostate, plus improvement in heart health.
Potatoes got sent to the NO list because they were fattening, I always suspected it was more what people lathered on the potato. (my latest healthy thing is cottage cheese or salsa on my potato)  Good news is that you can change the color of potato you eat to purple and lower blood pressure of hypertensive, obese people, according to a 2012 study.  Bonus is they are high in fiber & no fat.
Coffee was blamed for stopping your growth and harming bone density, well good news is you can put it on the YES list because recent reaearch has shown that coffee lowers risk of developing diabetes, cancers of the mouth, endometrium, prostate and skin.  Coffee consumption has even been associated with a decreased risk of dementia & Alzheimer’s.

Could This Be the Reason Food Allergies, Autism & Other Health Issues Are Skyrocketing?

Skyrocketing rates of Autism & so many food allergies should awaken us.  “This generation of children should be called Generation RX, because of the amount of doctor visits & allergy prescriptions being written for them” says Robyn O’Brien. (see her bio below)  Since the inroduction of GMOs in the 80’s to now, statistics show a rapid rise. Monsanto & other biotech corporations have developed GMOs for our food supplies.  Biotech companies are telling us that GMOs are safe, but no tests are required to show the safety of GMO foods.  Independent research studies are prevented because the process of GMOs, itself is patented, to protect the companies & their shareholders.
A bill called “The Monsanto Protection Act” by opponents, the budget rider shields biotech behemoths like Monsanto, Cargill and others from the threat of lawsuits and bars federal courts from intervening to force an end to the sale of a GMO (genetically-modified organism) even if the genetically-engineered product causes damaging health effects. So who is protecting us?  


Labeling would help you decide the safe foods for your family.  Whole Foods, Sprouts & Target are introducing lines of food that do Not contain GMOs. The food industry is fighting the labelling, saying it is too costly to label but many of them are already labelling in 64 countries, just Not the USA!    

People are Food Illiterate.  Recent film documentaries are helping. People need visuals. Many non-fiction books & many magazines are now exposing hidden knowledge of what is going into our food supply,  In a recent nutrition class, I watched one of those documentaries and was “blown away” with seeing just the tip of the iceberg in “Food, Inc.”. The State of Washington will be the first state to hopefully lead other states to follow.  If the measure passes, “Washington would be the first state to pass a mandatory GMO food-labeling law with no strings attached” quotes the Bellingham Washington News.
I’m from a generation who lived on peanut butter & jelly sandwiches, today P & J has the potential to kill a child in minutes.  What happened? Parents need to know foreign protein is being produced, so new, so novel and because of patents cannot truly be researched by independent studies.
We, the consumers have the power to Change the marketplace!  Will we continue to casually glance through a book or magazine that is attempting to give us a real picture of what is happening to our food supply or will we just accept the “spinmaster’s” words and continue to poison our children?
Many farmers who are currently using GMO/Monsanto seed are so afraid of the crops they are growing, they do not allow their children to use them.  Many farmers are fighting for survival, but to convert a farm takes 3 years to get the farms back to clear ground of chemicals & GMO crops. It could mean a fight for their survival.
Consumers do not understand because there have been no studies, the jury is still out and with labeling.

So much to process, that something we felt was safe, like corn is being grown as genetically altered to produce it’s own pesticide,  Roundup will kill weeds but will not affect the GMO plant, because it has altered genes producing its’ own pesticide.  70% of a child’s immune system is in their digestion system.  How do these chemicals effect their sensitivities. Is Your Health in Jeopardy?

Obesity is defined as a BMI ( a ratio of weight to height) of 30 or higher.
For many years, it was believed that heart disease was a result of the strain put on the heart by a severely overweight body, but that was simplistic. Heart specialists also thought that type 2 diabetes & high blood pressure were the mechanisms that damaged the heart. We are now discovering that the state of being obese, in and of itself, can lead to cardiovascular dysfunction and heart failure.

New England Journal of Medicine published a study in 2002 that showed that excess body weight increased the risk of heart failure, without even considering diabetes or hypertension as risk factors. Obesity can cause thickening of wall of the heart’s left venticle– a condition called left venticle hypertrophy — that can cause heart failure. We also know that excess abdominal fat signals the liver to produce high levels of the “bad” cholesterol that can block arteries and provoke heart attack causing blood clots.

A 2004 study found that the hearts of severely obese people had a reduced ability to pump blood and refill with blood between heartbeats. They also found a smaller but significant dysfunction in the mildly obese subjects, the likely cause: inflammation caused by metabolic changes.

Inflammation of blood vessel walls boosts heart failure risk, Other results of this study revealed that obese people are more likely to have a higher level of immune system proteins such as interleukin 6, C-reactive protein and fibrinogen. At normal levels, these proteins are beneficial aspects of the immune system that cause inflammation to help wound healing; But at chronically high levels, they can cause serious damage to the cardiovascular system. In fact, doubling interleuken 6 levels alone increased heart failure risk by 84%.

“The biological effects of obesity on the heart is profound” says Dr. Jao Lima, professor of medicine and radiology at the John Hopkins School of Medicine. “Even if obese people feel otherwise healthy, there are measurable and early chemical signs of damage to their hearts, beyond the well-known implications for diabetes and high blood pressure.”

The Metabolic Syndrome
Typically diagnosed when a patient has low “good” cholesterol, high “bad: cholesterol, high tryglycerides, high blood pressure and insulin resistance. Obesity can trigger every one of these conditions. The Metabolic Syndrome is the “perfect storm” of cardiovascular dysfunction risk because it can attack the heart and blood vessels from so many directions: coating arterial walls with sticky plaques, increasing inflammation that damages blood vessels, damaging the cardiovascular system by raising blood pressure and causing abnormalties in the heart.

Insulin Resistance,
The greatest long term concern with obesity. “Insulin resistance is probably one of the big mechanisms that causes people to get diabetes. We’ve learned now that people who have too many fat cells…those cells are releasing a lot of chemicals that make the body resistant to insulin. it makes the body pump out more and more insulin to take the blood sugar out of the muscle. Eventually, the pancreas burns out and people get diabetes.”, says cardiologist, Dr. Joseph Johns.

According to Dr. Louis Ignarro and Dr. Andrew Myers, the cause of many weight issues is metabolic dysfunction. Pan-Seared Salmon Over Mediterranean Vegetables


3 olive oil, divided
2 prosciutto, diced
3 fresh garlic, minced
1 1⁄2 red onion, chopped
10 button mushrooms, stems removed, caps thinly-sliced
4 plum tomatoes, cored and diced
4 (packed) spinach leaves, chopped
1 fresh basil leaves, torn
4 4-ounce salmon fillets, about 1-inch thick
Salt and freshly ground black pepper to taste

Heat 1/2 teaspoon of oil in a small nonstick skillet over low heat. Add prosciutto. Sauté for 5 minutes, or until crispy. Stir in garlic; turn off heat.

Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat. Add onion and mushrooms and sauté for 8-10 minutes, or until golden. Stir in tomatoes and cook for 3 minutes. Add spinach and basil and cook for 3 more minutes. Stir in prosciutto-garlic mixture. Cover; keep warm. Season salmon fillets with salt and pepper.

Heat remaining 1/2 teaspoon of oil in the same skillet used to cook prosciutto over medium heat. Add salmon, skin-side down. Cook, covered, for 10-12 minutes or until fish flakes easily. Use a spatula to loosen fish from its skin, which will stick to skillet. Divide vegetables among 4 plates, top with salmon and serve immediately.
